This recipe is a super healthy twist to the ever popular eggs on toast. You can choose to use boiled eggs (as shown here), fried eggs or poached.. however you prefer your eggs!
What’s in it…
2 eggs (we used free-range eggs)
Rye bread (you can use wholemeal, multigrain or whatever bread you prefer, we used Polish Rye bread)
1/2 an avocado
Splash of lemon or lime juice
1/4 teaspoon chilli
Pinch of salt
Pinch of black pepper
2 or 3 cherry tomatoes (chopped)
How to make it…
Smash your avocado with a fork in a bowl. Add salt, pepper, chilli and lemon juice. Toast your bread. Spread your avocado mix on your toast. Add your tomatoes. Finally add your eggs. Serve and enjoy!
