Organic Chocolate Coconut Protein Balls recipe

These protein balls courtesy of @kellielunn are so scrummy and easy to make. Plus as they’re made with organic ingredients they’re safe for the kids too.

What’s in them…

1.5 cups cashews
8 pitted medjool dates
1tbsp coconut oil
1tbsp cacao
1tbsp vegan protein powder
1tbsp chia seeds
1/4 cup dedicated coconut (optional for rolling in)

How to make them…

Process all ingredients in your food processor until sticky  and to the consistence you like – mix for longer if you like them smooth or less if you like them chunky.

Then roll into balls and refrigerate.

These will last in the fridge for a good week or so if you can resist them long enough!
